This was good, like really good.
I will definitely be making this culinary experiment again.
4 thighs Tyson Chicken Thighs (skin and bone included)
4 oz Kerrygold Swiss Cheese
1 cup Fresh Express Baby Spinach Leaves
1/4 cup Emerald Dry Roast Almonds
1/4 cupLocal Honey

brush for honey
Set your oven to 375. While it’s preheating place your chicken skin side up on a glass baking dish. Crush or sliver your almonds. Peel back the skin of the chicken leaving it attached. Place an oz of Swiss cheese on each chicken breast. Top with a 1/4c of spinach and a 1/4th of the almonds. Cover the layers with the skin using the toothpick to secure if necessary. Brush the skin of the thighs with local honey.
Bake covered with foil for 50 minutes. Uncover for last 10 minutes to let the skin crisp.
